A very, very important point is indeed the public kitchen, because as you said “One of the expenses you can’t simply exclude from your budget is food.” You can cook your own food, prepare your own lunch bags, cook with other people plus meet other people as well. I think, every kind of budget traveler loves staying at Hostels just for this simple fact!
